Gluten Free Banana Nut Muffins

Tuesday, July 5th, 2011

I’ve been making this recipe quite often lately as bananas seem to ripen too quickly in the summer heat.  I found the recipe here, but I used ground almonds instead because I didn’t have any walnuts on hand (and no, I didn’t toast them and it still tastes fine!)  This recipe uses whipped eggwhites to [...]

Gluten Free Birthday Treat (or for the 4th of July)

Monday, June 27th, 2011

This year I made gluten free mini-tarts for my husband’s birthday.  This was a favorite treat his grandma used to make him, but he hasn’t been able to eat one ever since becoming gluten free.  I’ve simplified this recipe from the elaborate one in the CIA’s Gluten Free Baking cookbook, so it’s easier to whip [...]

Gluten Free Soda Bread

Wednesday, March 16th, 2011

Last year I made an Irish soda bread for St. Patrick’s Day using the usual gluten free all purpose mix flour with xanthan gum, but it was crumbly and dry, so I wasn’t happy with it.  This year I tried the soda bread recipe from my new cookbook: Gluten Free Baking with the Culinary Institute [...]

Gluten Free Christmas: Chocolate Marshmallow Log

Sunday, December 12th, 2010

My grandma in Vancouver, BC makes this chocolate marshmallow log every year for her Christmas dessert table.  I was pleasantly surprised to learn it’s a flourless treat!
Grandma Smith’s Chocolate Marshmallow Log
6 oz semi-sweetened chocolate chips
2 Tbsp butter
1 cup powdered sugar
1 egg, beaten
1 tsp vanilla
2 cups miniature colored marshmallows
1/2 cup maraschino cherries, quartered
1 cup chopped walnuts [...]

Gluten Free Blueberry Buckwheat Muffins

Monday, August 16th, 2010

So many great things at the Farmer’s Market this weekend: local honey, buckwheat flour milled in upstate New York, and the last of the blueberries for the summer.  What could I make with all of these wonderful ingredients?  I had no recipes at home using buckwheat and blueberries, so I combined a couple different recipes [...]

Fennel Cakes

Monday, July 5th, 2010

This is the first year I’ve had the chance to try out gardening in the community garden on my street.  I was lucky enough to inherit quite a few plants that were already growing there – collard greens, oregano, lemon balm, and fennel.
The interesting thing about fennel is that it grows QUICKLY, much like a [...]

Gluten Free Christmas Cookies: Hazelnut Almond Meringues

Thursday, December 17th, 2009

One of our favorite treats to get at the grocery store is a box full of meringues!  Not every meringue recipe is gluten free, but this one from Canadian Living Magazine is and makes a great gift:
Hazelnut Almond Meringues
1 cup hazelnuts
2 egg whites
Pinch cream of tartar
3/4 cup powdered sugar
1/2 tsp almond extract
2 tbsp cornstarch
1-1/2 cups [...]
